Chicken Art Vandelay...

 

This chicken dish was inspired by Seinfeld and the entirely fictional character, Art Vandelay.  Jerry's friend, George, blamed Art Vandelay whenever George found himself trapped and had to invent a lie about where he was or what he was doing.  Like Art Vandelay, this is a faux Indian chicken dish.  Savory but not "offensive" to those who don't particularly care for curry, the chicken is complemented with onions, raisins, and basmati rice simmered in a hearty chicken broth.

In this preparation, I've used chicken thighs.  Cubed chicken breasts or cutlets would work as well.  In a Ziploc plastic bag, combine flour, curry powder, salt, and pepper.  Add the chicken pieces and shake to coat evenly.

Brown the chicken in olive oil and butter and set aside on a plate.  Brown the onions, add the raisins, chicken broth, basmati rice, and dried parsley.  Stir to mix the ingredients.  Lastly, add the chicken.  Cover the Dutch oven and simmer until all of the stock has been absorbed but the rice is not "dry."  Stir once or twice while simmering to incorporate all of the flavors.
